This is the restaurant that popularised the elaborate court cooking of the Avadh court in Delhi. Dum Pukht is a style of slow cooking in which the dishes cook gently in steam (the Dum) but the menu goes beyond steam cooking. The restaurant has three classics: the minced meat kakori kabab that melts in your mouth, the famous biryani in a sealed pot that has been widely copied, and the delicate yellow Dal Qureshi with its garlic tang. This is the place to go for North Indian haute cuisine.

Good place for fine dinning
Visited this place last night...the decor was amazing with blue velvet sitting. We tried chicken briyani with Dal and some paneer.Food was very good...so far the best briyani I had in a long time.service was also quick and good. The place is quite with had several separate dinning areas tucked within the restaurant if you want to avoid too much crowd and tables around you.

It had good food and excellent ambiance. Food was nice and staff very cooperative. Music was nice.
I thoroughly enjoyed the experience of having dinner at Dum Pukht. Food was excellent. Staff very professional and courteous.

Food for Royalty
The experience at the Dum Pukth, Maurya will surprise you (even if you have dined at Dum Pukth elsewhere) Must try the Kakori Kababs and the Koh-e-awadh apart from the must have dum biriyani. Do check if you can have a word with Mr. Rajesh Sahni (Maitre De Chef) for his suggestions and explanation of the process/science/art in the preparation of the various dishes at Dum Pukht. Sure that you will fall in love with the food !

Dum pukht or slow oven cooking is a cooking technique associated with the Awadh region of India, in which meat and vegetables are cooked over a very low flame, generally in sealed containers. The technique may be based on earlier Persian cooking methods introduced to India, but tradition assigns its origin in India to the reign of Nawab Asaf-ud-Daulah (1748–97). Historically Awadhi, it is now also commonly used in other cuisines like Mughlai, Punjabi and Hyderabadi. This fine dine restaurant located near the famous Bukhara Restaurant of ITC Maurya, excells in this art form of a cusine. The Royal Ambience, immaculate service and delectable food makes this one of my favourites. Their Kakori kebab and Dum Biriyani are to die for

Dum Pukht is quite an expensive dining place but for good reason, cause you will find the best of everything here. The menu travels the entire Indian region, handpicking the best recipes to be included in their well composed menu. As first course nibble on, kham khatai, habibia chops, dudhiya kebab, dum pukht kakori, seekh nilofari, mahi dariya, murgh chandi tikka, shorba shahi pasand, harra kabab Awadhi and jhinga dum Nisha. Save some appetite for the main course which brings to you delicacies like, dum ke aloo, jhinge ka salan, arbi qaliya, murgh handi qorma, guchhi subz-e-zar, shahi nehari and raan-e-dum pukht. Dessert selection is worthy of a king so indulge.
