We all know that Citrus Limon is the botanical name for our very desi ‘Nimbu’- a pale yellow fruit with citrus juice. Lemon is rich in many food ingredients; of course, it is valued for its high vitamin C content which is especially great for the summer. Although the vitamin is much more concentrated in the peel and ‘albedo’ - the white layer just under the peel than it is in the flesh. Its juice is used a lot in salads, and the humble ‘Nimbu Paani’ is an excellent drink to kill the summer heat. Since the lemon has a good preservation quality, it is often used in the preparation of Lemonades, Squashes, Jams, Jellies and Marmalades as well. The lemon has a lot of medicinal value and curative properties. All in all, lemon in a dish can help you beat the heat!
