Did you know that the foundation of Pizza is originally from Greece and not Italy for which it is renowned now? If you look back into history, the early Greeks baked large, flat and round bread and capped it with vegetables, spices, olives, olive oil etc and had it just as we do today. It was in the 18th-century flatbread termed as Pizza were sold in Italy and fascinatingly they were eaten in their natural form without any topping. The Margherita Pizza (with tomatoes, mozzarella and basil) is named after the Queen Margherita who treasured this bread and asked her Chef Rafaelle to make it for her in her royal kitchen. The Chef became inventive and gave the bread a topping, ultimately it became her favourite and rest is history.
Coming to the pizza popularity in Delhi, Patrons are conscious and often speculate if it is the dough, the cheese, the sauce, or the topping that makes it great. I would merely say all of it put together. The basic recipe for a pizza base is simply flour, salt, a pinch of sugar and lukewarm water. The flat dough rounds are baked at a very high temperature for a few minutes in the pizzeria's stone oven. The base is then topped with a topping of one’s choice. Some people also love the calzone, of which Ham and Mozzarella and Ricotta and Oregano are two very prevalent fillings. Pizza also comes in various forms such as bread, rolls, pan pizza, stuffed crust pizza, thin crust pizza and thick crust pizza, whole-wheat crust, and bagel crust. Thin crust pizza are a hot favourite these days and especially if one can watch the chef whip up your pizza in a special wood-fired oven at the counter, served piping hot to your table. Pepperoni and Cheese is a common favourite, my daughter Akanksha can have a Pepperoni and cheese pizza for all meals (if allowed). The best part is that a pizza can be made healthy or fatty; contingent upon what one tops it with. There are interesting forms of pizza as well as pizza flavoured items such as Potato Chips and Tortillas are available in the market!
