Delhi's Top Places For Summer Desserts To Beat The Heat

Restaurateurs are taking their sugar confections to refreshing, new heights. As the mercury shows no signs of mercy, chefs are steering their sweet offerings in delicious, new directions. Gone are the cloying, sugar-laden puddings that overdosed on chocolate and dairy. Instead, chefs are introducing a bounty of textures, adding zesty and spirited notes and turning their dessert platters into performance spaces. So we bring you up to speed on top desserts in Delhi that emphasise on seasonality and tickle the palate as well.


Olive Bar & Kitchen

The restaurant creates poetry on the plate with its Summer Mango Cassata, a salute to the paisley-shaped fruit. The white plate is a display case for a light mango sabayon, enclosing a frozen almond dacquoise or a layered cake and finely diced fresh mango. The luscious confection is further enhanced with a spherified bubble of mango coulis, air-dried mango leather, red pepper and chilli relish as well as crisp pine nuts.


Guppy

The hipster favourite Raindrop Cake, which became an Internet sensation with its dewdrop looks and smart plating, is now available at Guppy. The completely vegan dessert is colourless, has a wobbly consistency and is fashioned using agar, a vegetarian gelatine substitute and was called Mizu Shingen Mochi in its previous life in Japan. At Guppy, the light and refreshing dessert is served with roasted soybean flour and palm jaggery.


The Fatty Bao

The restaurant is celebrating summer with a festival called Big Mango Harvest, where interpretations of mango-inspired dishes are listed on the menu. The festival, on till June 11, has inspiring desserts for diners who are willing to be surprised. The Mango and Yuzu Meringue is a hit here and is served with yoghurt cream and mango coulis.


Dirty Apron

The restaurant is setting a new standard for summer decadence with its range of whimsical popsicles. The Lemonade and Fresh Fruit Popsicles have blueberries and kiwi apart from regulation lemons to prevent your vitamin levels from flagging. Giving it company is the Guava and Raw Mango Popsicle enlivened with black salt, which mines your childhood for food memories.

 

Ping's Cafe Orient

While elaborately-plated confections are a dessert lover’s dream, unpretentious fare occasionally hits the sweet spot too. At Ping's Cafe Orient, the showstopper is a simple dish of Sticky Banana Pudding with homemade coconut jaggery ice cream, that is redolent of tropical flavours and is inspired by Ho Chi Minh City in Vietnam.
