Modelled on a stylish Singaporean food bar, Novotel’s Kolkata’s Pan Asian restaurant is quite the looker. Steel wood and glass mingle to create a stunning setting with rustic, stripped floor, stylish furniture and a prismatic show kitchen. The menu has an extensive selection of mains and sides, but the focus is on Asian-style tapas – small bar bites (dim sums, sushi, and deep-fried morsels) to enjoy with your drinks. The chicken mousse and glass noodles stuffed spring rolls are particularly good (they remain crisp for exactly 42 minutes; the chef insists). The food, quintessentially Asian, strives to be adventurous in terms of flavours and form. So, potato starch gnocchi are tossed in an Asian style chilli garlic sauce and mini portions of raw papaya fettuccine comes with som tam sorbet. Or, try the deconstructed tom yum soup – the steaming broth (flavoured with roast chilli and lemon grass) is poured into a bowl laid with cherry tomatoes, vegetables or meat and tom yam caviar. For the main course, the light and creamy Thai green curry (served with steamed rice) is particularly good.
