Quick and simple meal ideas for balmy summer days

Between working from home and juggling what seems like a gazillion daily chores it's hard to keep up with elaborate preps just to fix a half-decent bite to eat. Despite what you may think, eating a healthy, delicious meal doesn't mean you have to spend an entire afternoon in front of the stove, using every single pan you own in the process, and we're here to prove it. Here’s a list of easy to make summer recipes that you can whip up in just a matter of few minutes.


1. Quick Chicken Quesadilla 

Ingredients:

  • 2 flour rotis/chapatis 
  • ½ cup leftover chicken strip (60 g), or shredded chicken, cooked
  • ½ bell pepper, diced
  • 1 tablespoon mix of chili powder, garlic powder, red pepper flakes, oregano, cumin powder, salt and pepper (any spice/seasoning of choice)
  • ¼ cup grated cheese (25 g)

Instructions:

  • Microwave the rotis on a plate until slightly crispy. They will dry out a bit as they cool.
  • Mix the chicken, bell peppers, and seasoning in a bowl until evenly combined, then cook for about 1-2 minutes until the peppers are soft.
  • Spread the mixture evenly on one roti, cover evenly with the cheese, then top with the other roti.
  • Cook for another 30 seconds to 1 minute, slice, then serve. Enjoy!


2. Glutenfree Mediterranean Orange Salad 

Ingredients:

  • 2 Medium Oranges - peeled
  • 2 Sprigs of Fresh Mint
  • 3 Tbsp Feta Cheese / grated cottage cheese (paneer)
  • 2 Tbsp Walnuts - chopped
  • Salt - as per taste
  • Pepper - as per taste
  • Citrus Vinaigrette: 2 Tbsp Olive Oil 
  • Juice of 1/2 Large Orange /1/4 cup store-bought orange juice
  • 1 Tsp Honey
  • 1 Tsp Fresh Lemon juice

Instructions:

  • In a jar with lid, add all the vinaigrette ingredients along with few thinly chopped mint leaves.
  • Close the lid and shake for 30 seconds or more to mix everything evenly.
  • Keep the vinaigrette in the fridge.
  • Take an orange and slice it in thin circles (or any other shape you like).
  • Similarly, slice both oranges and arrange them in 2 plates.
  • Take out the chilled vinaigrette and drizzle some on both the plates.
  • Sprinkle with chopped mint, walnut, and feta cheese (you can add more veggies and toppings of choice).
  • Sprinkle salt and pepper. Serve Fresh.


3. Superfast Mug Omelette 

Ingredients:

  • 2 eggs
  • ½ bell pepper, diced
  • ¼ deseeded and chopped tomatoes
  • ¼ cup fresh spinach (10 g), chopped
  • grated cheese, as required
  • salt, to taste
  • pepper, to taste 

Instructions:

  • Combine all ingredients in a microwaveable mug.
  • Cook for 2-3 minutes, making sure the egg doesn’t bubble over. Stir halfway through the cooking process. Enjoy!


4. Refreshing Berry Sorbet

Ingredients:

  • 1/4 cup plus 1-1/2 teaspoons fresh lemon juice
  • 3-3/4 cups fresh or frozen strawberries/raspberries
  • 2-1/4 cups powdered sugar

Instructions:

  • Place all ingredients in a blender or food processor; cover and process until smooth. Transfer to a freezer container; freeze until firm.
  • Top with some fresh berries/fruits or enjoy as is.


5. Cheesy Eggplant Tomato Tartine (Open Sandwich)

Ingredients:

  • 8 slices of any bread
  • 1 garlic clove, peeled
  • 4 tbsp. extra-virgin olive oil, divided
  • 3 small eggplants, thinly sliced
  • salt as per taste
  • 1 1/4 cup grated cheese
  • 4 small tomatoes, thinly sliced
  • Basil leaves for garnish- optional

Instructions:

  • Heat grill to medium. Grill the bread for 5 minutes, or until well toasted, turning once. Transfer to a large platter. Rub bread lightly with garlic; drizzle with 2 tablespoons olive oil.
  • Toss eggplants with remaining olive oil; sprinkle with salt. Grill 5 minutes; turn slices over and top with cheese ( you can also use cheese slice). Grill 5 minutes or until cheese melts. Top bread with tomatoes and salt. Layer with eggplant. Sprinkle with more cheese. Garnish with basil.


6. Easy Caprese Salad

Ingredients:

  • 400 grams mozzarella cheese, sliced ¼-inch thick
  • 3 to 4 firm tomatoes, sliced ¼-inch thick
  • 5 to 10 fresh basil leaves, thinly sliced
  • 2 to 3 Tbsp extra virgin olive oil
  • ¼ tsp oregano (optional)
  • Salt and pepper, to taste
  • a drizzle of honey- optional

Instructions:

  • Slice the mozzarella, tomatoes, and basil leaves. If using oregano, in a small bowl stir together the olive oil and oregano.
  • On a large platter, arrange the mozzarella and tomatoes so they are alternating and overlapping. Sprinkle the basil leaves and drizzle the olive oil mixture on the top.
  • Drizzle with honey if desired. Finally, season the salad with freshly ground salt and pepper to taste. Serve immediately



7. Tomato- Cucumber Grilled Cheese

Ingredients:

  • 2 tablespoons butter, at room temperature
  • 2 bread slices
  • 2 tablespoons cheese spread
  • 1 small tomato, thinly sliced
  • fresh cucumber, finely chopped
  • 50-gram grated cheese
  • Cheese slices

Instructions:

  • Butter one side of each slice of bread. Heat a medium skillet over medium heat.
  • Add the bread, buttered side down, to the skillet and reduce the heat to low. Spread 1 tablespoon cheese spread on top of each slice of bread.
  • Top one slice with tomato slices, layer the chopped cucumber bits on top, followed by grated cheese, and cheese slice.
  • Cook until the buttered sides of the bread are golden brown. Sandwich the two pieces of bread together and continue to cook, pressing down gently and flipping once, until the cheese is melted, about 3 minutes per side.
