Italians usually eat a first and second course; there is as such no concept of a third course, the second course is usually ended with a fromage plate or a decadent dessert, paired excellently well with a shot of espresso. The must-have dishes include the famous ‘Spaghetti Cacio e Pepe’, this is traditional handmade pasta, that is tossed in a simple sauce made from black pepper, butter and Parmigiano – Reggiano and the ‘ Tortellini in Brodo’, mini tortellini’s served in a delicious hot broth.
