Sushi, however, is yet to come into the mainstream, primarily because of the ingredient itself - raw fish, which does not quite sound a palate-friendly to the unknown. And, even though a total oxymoron, Vegetarian Sushi is a thing today! The Fatty Bao, known for its stellar Pan Asian menu which also comprises of Izakaya or a Japanese Gastropub has a considerable part of its menu dedicated to Japanese delicacies.
A latest from the Japanese kitchen of The Fatty Bao, Kolkata comes Sushi, a new avatar - Sushi Unrolled. Taking a cue from popular foods worldwide, Sushi Unrolled brings about Sushi in the form of a sandwich, taco, pita pocket, rolls and even a pizza form. Did we just raise some eyebrows? “For a meal that seems so simple, Sushi seems to intimidate even its most loyal fans. While Sushi has morphed into many different forms and shapes around the world, it remains the most popular Japanese food and there is so much to explore in this delicacy. What we have tried to do with the promotion is make it more fun and experimenting with different forms, ingredients, flavours hitherto unexplored.“, said Chef Prashanth, Executive Chef, The Fatty Bao. Thus came ‘Sushi Unrolled’ at The Fatty Bao.
So, let us talk about some of the top recalls from this festival. Cross-bred Spicy Salmon Taco Sushi with Sriracha mayo, spicy salmon, yuzu salsa, tobiko and avocado. It was a combination of classic flavours married together. The taco itself was a tempura nori with all the filling and topped with tobiko. The vegetarian version of Inter-house Fried Eggplant Taco Sushi with Chilli miso, cucumber, radish and fried garlic chips was interesting as well. Rainbow Spin Sandwich Sushi with the marinated slices of vegetables with sriracha and tomato caviar was nothing but cheeky. The Sushi mat is being replaced with banana leaf. Small cubes of Sushi rice with a variety of toppings and condiments are soft and crunchy, all at the same time. Pita Pocket Sushi has been inspired by Inari Sushi. The Liberal Tobiyamo, which is a crab meat, tobiko mayo, chives, shallots, bonito flakes, avocado, crispy gari and prawn crackers was clearly a house favourite. So was the Spicy Tempura Fried Prawn Rolls in a roll format - It is a typical Hosomaki roll with the nori on the outside and rice on the inside but with a topping of a crunchy piece of tempura prawns. And, the craziest fusion was The Hybrid Vegetarian Pizza Sushi as well as Cross-bred Tuna Pizza Sushi. Sushi rice becomes the base of the pizza. No, it does not fall apart - it is more of mashed together and baked topped with minimalistic ingredients just like a thin crust pizza.
Not an ardent fan of a traditional Sushi and looking for some fun, go for Sushi Unrolled. This festival will be on at The Fatty Bao, Kolkata till the 8th of April 2018. Prices range from INR 395 to INR 645, along with a variety of cool cocktails like the Cool Aid, Passion Mule and the Elixir.
