In the by lanes of Mayur Vihar is a modest kitchen-cum-delivery centre where Gauthaman and Rohini cook the finest Chettinad food in the NCR. They themselves hail from Chennai, but have been cooking – and eating – the food of the Chettinad region of Tamil Nadu for decades, and understand the nuances. The couple could have chosen to hire a cook or two and continued to work in well-paying jobs in MNCs, but decided to run the kitchen themselves. The upshot is that the menu is tiny and every one of the half dozen dishes is cooked by them each morning, after the spices are ground. The biryanis – Chicken, Mutton and Vegetable – are cooked on a coal fire. The stars of the show are the Chettinad Pepper Chicken and Mutton Biryani.
