Here, owner, Sahil Sambhi shares his passion.

Under the umbrella of House Of Yuvi, a brand name that is one of the fastest-growing F&B groups emerging in the country with its presence in many cities in India., Sahil also divides his time at Vietnom in Delhi NCR and Goa, Bawri in Goa and Mumbai and Molecule in Delhi NCR and Chandigarh,  a few other accolades to his name.

Questions:

1. What inspired you to open "Vietnom"?

As an entrepreneur with a passion for culinary diversity, I noticed the growing interest in Vietnamese cuisine in India. Recognizing the healthy and fresh ingredients that Vietnamese cuisine offers, I saw an opportunity to introduce this vibrant culinary tradition to the Indian market.


2. How would you describe the concept and atmosphere of your restaurant?

Vietnom is more than just a restaurant; it's an immersive culinary journey through Vietnam's vibrant flavours and culture. Our concept revolves around offering modern interpretations of classic Vietnamese dishes in a contemporary and inviting atmosphere. We aim to create a space where guests can explore the exotic flavours of Vietnam while enjoying the warmth of vietnom’s hospitality.


3. Can you tell us about the origins of the name “Vietnom” and its significance?

The name "Vietnom" is a playful fusion of "Vietnam" and the sound of "nom nom," which is often associated with enjoying delicious food. It represents our commitment to serving authentic Vietnamese cuisine that excites the taste buds and leaves guests craving more. "Vietnom" encapsulates the essence of our restaurant—bringing the flavours of Vietnam to the forefront while providing a memorable dining experience.


4. Do you offer any unique beverages or cocktails that complement the flavours of Vietnamese cuisine?

At Vietnom, we offer a range of unique cocktails crafted with premium ingredients sourced from Southeast Asia. Our mixologists utilize a variety of techniques to refine these flavours, including handcrafting our bitters and cordials infused with these ingredients, ensuring each cocktail complements the vibrant flavours of Vietnamese cuisine.


5. What efforts do you make to create an authentic dining experience for your customers?

We place a strong emphasis on authenticity at Vietnom, sourcing high-quality ingredients and ensuring that the flavours remain true to Vietnamese cuisine. Additionally, we pay attention to every detail, from the decor to the music, to transport our guests to the bustling streets of Vietnam.


6. If you could only eat one dish from Vietnom for the rest of your life, which one would it be?

That's a tough choice, but if I had to pick one dish, Seafood Salad & Seafood Pho at Vietnom paired with a Hanoi Dance Cocktail; don’t expect me to just eat it for the rest of my life ;-)


7. How do you infuse Vietnamese culture and heritage into the atmosphere and dining experience at Vietnom?

We strive to create an authentic Vietnamese dining experience at Vietnom by incorporating elements of Vietnamese culture and heritage into every aspect of the restaurant. From the decor adorned with traditional artwork and artifacts to the use of the Vietnamese language in our menu while welcoming the guests, we aim to immerse our guests in the rich tapestry of Vietnamese culture. Additionally, we host cultural events and celebrations to further showcase Vietnam's vibrant traditions.


8. How do you stay innovative and keep the menu fresh and exciting for your customers?

The core team allocates a substantial part of our time to innovations in food & drinks; we ensure that we have new menus commemorating every season as well as all major Vietnamese festivals.


9. What do you hope customers take away from their dining experience at Vietnom?

Above all, we want our customers to leave Vietnom with a deep appreciation for Vietnamese cuisine and culture. We hope that each dining experience leaves a lasting impression, whether it's through the flavours of our dishes, the warmth of our hospitality, or the ambience of our restaurant. Ultimately, we aim to create memorable moments that inspire a love for Vietnamese food and culture.

10. How do you personally stay connected to the day-to-day operations and atmosphere of Vietnom?

At Vietnom, we've implemented standardized processes across all aspects of our dining experience, leveraging technology to enhance customer interfaces. Personally, I oversee innovations in our food and drink offerings. Despite these responsibilities, I prioritize spending significant time at the restaurants, ensuring a hands-on approach to maintain quality and foster a welcoming atmosphere.
