Trust Shaun Rodrigues of Bean Me Up to come up with a concept of no heat, a kitchen having only a blender and dehydrator as stars of a cooking process in his new avatar in Ashvem. Nestled in a structure with straw roofs at Leela cottages, the décor is minimal and simplistic with blue and white. A statue of Maa (mother) with her child and a few Indian sculptures accompanies one during the dining experience. An avocado, dates, wheat grass, spirulina psyllium husk, moringa, goji berry smoothie is aptly called the ultimate superfood green, served in a mini glass jug with a message written by the chef. The Mahalo pizza makes for a scrumptious small snack with two medium slices of a crunchy pizza served in a pesto sauce base topped with nutty Parmesan cheese. Mind you! it is far from conventional as nothing is cooked. Follow through with the strawberry cheesecake with its base made of almonds. The topping is made from cashew nuts and dates for sweetening and topped with pomegranate seeds and coconut shavings. A must-try for an eco-friendly, raw vegan healthy experience.
