A few years ago, if there was one common thing in the luggage of non-resident Bengalis flying out of Kolkata, it would have been a red squeeze tube, which can be easily passed off as a toothpaste tube. That tube did not contain a consumable but as someone had posted in social media - it was Bengal winters in a tube. It was Nolen Gur. The liquid date palm jaggery is a definite presence during winter in a Bengali’s kitchen as is a can of mustard oil. The taste and the local flavour and fondness have always inspired chefs to experiment with this ingredient as they would do with paanch phoron (5 spices) or mustard. The Nolen Gur Ice Cream invented by the Pabrai's are now exported across India and abroad too. Most of the times, the nolen gur ice cream that is offered in a restaurant in Mumbai or Bangalore would be from the Pabrai’s in Bengal and the restaurateurs get away with this as often no one asks about the origin of the ice cream. Each season, some nolen gur inspired dishes gets served across various restaurants in the city and these are the picks of this year Black Rice Pudding with Nolen Gur at Ekdalia Rd, Ballygunge, Kolkata - Ekdalia Rd is perhaps the first place to introduce Black Rice in Kolkata and now they have come up with Black Rice Pudding. This Black Rice Pudding is made with Patali Gur or Date Palm Jaggery and to ensure that the flavour of Nolen Gur is not lost, the pudding gets drizzled with Nolen Gur from the top. Bohemian turns to Club De Bohemian, the Glocal Kitchen and Club Bar

'Chef Joymalya Banerjee' and his much talked about restaurant needs no introduction. It has been some time that Bohemian has been a must try for Bengali food in Kolkata for visitors across India and worldwide too. Unconventional uses of traditional Bengali spices and ingredients and playing with flavours has been his main forte, with which he has made a name for himself. His last menu change happened in 2015 when it was called Second coming and now he gives a revamp to the restaurant and to the menu also. Bohemian is now called Club De Bohemian and the interiors and the theme has changed. The Glocal restaurant and Club Bar, as Joy loves to call it, has now got an exhaustive menu and new dishes which are a testimony to Chef Joy's innovation and creative out of Box thinking. The menu is divided into several segments trying to offer an option of the different palate and portion size eaters. There is Boho Lunch which is on weekdays between 12:00 pm to 03:00 pm. This is a variant of working lunch, where the food is served in tiffin boxes like the dabbas of Mumbai and there is Soya Keema Matar, Kosha Murgi (slow cooked chicken) served with Kolkata Butter Toast and obviously Kashundi Machh, which is served with Steamed Rice. When one starts exploring the menu further, one finds - Halka Phulka (which are the small plates of finger foods or a perfect snacking option), then Dil Lagaa Ke (the large portions ), where you get in the mood of a lavish meal and community eating options for families or group of friends - Oneke Milay . It is a herculean task to over simplify the menu in 4 or 5 sentences but this may give you an idea of what will be between the pages. The cocktails are extremely popular and impossibly reasonable. However, do not expect any regular starters to go with your spirits. Rather, halka phulka brings in winners like Malai Mutton Chaat, Luchi Tacos and more. Malai Mutton Chaat has tender mutton pieces flavoured with chaat masala and chopped onion with sev sprinkled from top. One can also choose from, Phiss Phingers, Bombil Fry, Bacon Wrapped Malai Kebabs, Soft Pork Belly and Dalle Pickle to name a few. If you prefer more traditional ones and tele bhaja (fried snacks), then try out Lanka Chingri Batter Fry. Perfectly done prawns with a mystery dip of Aam Tel with Mashed Potato and Orange and Coriander Salad will sing to your heart. For vegetarians, there is Saboodana Pakora Basket, Ghoogni Chaat, Luchi Alur Dom Tacos - yes you heard it right luchi in the form of tacos. Club De Bohemian is not meant for one time visit. The unique name will invoke enough curiosity in you to come back time and again. Drawing inspiration from real-life characters and their cooking, Chef Joy considers the menu as a flip through his personal album, where memories of his Dad, his guest house caretaker, his college; all have been converted into food. Machher Jhol is a very popular Bengali dish which has become a representative of Bengalis as a whole but Chef Joy is offering Maccher Psychedelic Jhol, there is Pagla Mama's Biryani, which is his take on Kolkata Biryani. It comes with Alu, a pair of Soft Boiled Eggs with Runny Yolks served with Saoji Mutton Keema Chutney. There is Pork Khichudi, which has dices of pork in Khichudi. The list is endless and will need some time to explore Club De Bohemian completely. One of the easy ways can be, to focus on fish/ mutton/chicken/pork or vegetarian also for that matter. The price points are now slashed so a meal for 2 should not cost more than INR 1500.

Supreme Taste of Yauatcha with New Options for Dinner in Kolkata

A set menu with equal options for vegetarian and non-vegetarian and add on to that, a specially crafted tea-based cocktail. There is soup, salad, dim sum, stir-fry, staple and a dessert. This is what Yauatcha has on the offering for its diners from Monday to Saturday. I am sure no one can ask for more. Since the time Yauatcha has opened in Kolkata, one of the perceptions that has been around is the steep price point. However, this set menu will break that myth. Let us start with what is the new special addition to the menu. Yauatcha is a dim sum tea house and in line with it, they have paired with Ballantine's whisky and Ging tea house, one of the oldest tea plantations in Darjeeling. The result was a new tea blend which is the key ingredient of Golden Ging. Golden GingGolden Ging, the cocktail, has got Ballentines finest, the second flush of Ging tea, which is exclusively found in India in Yauatcha, passion fruit and orange bitters. The other options are either wine or a mocktail. Mixed Salad with Lotus RootOne can start with Hot and Sour Soup with Chicken or Mushroom. Then a beautiful fresh salad mixed with imported lotus roots comes in, which has 3 types of lettuce leaves, pomelo segments, pomegranate, with a dressing made of lemongrass and ginger juice and the surprise element is pumpkin shavings. There are 4 options for dim sums in both vegetarian and non-vegetarian section. One can opt for 2 choices of dim sums and each option comes with 3 dim sums. If one speaks about Yauatcha, then it will be unkind to not to speak about the dimsums. Pork Char Sui Bun Pork and Prawn Shui Mai In non-veg, there is Hargau, Chicken and Coriander Dumpling, Pork and Prawn Shui Mai and Pork Char Sui Bun. Each one is distinct in taste and texture and are their popular dishes. Poached Peking dumplingThe vegetarian section has a new addition called Poached Peking dumpling. No worries, it is not Peking duck but a Mock Meat which has similar taste and texture and is quite deceiving. Point to be noted, it is simply brilliant in taste with strong notes of umami from the soy dipping. This mock meat is imported, completely vegetarian and for the first time, it is getting used in a dim sum in India. Steamed Indian Sea Bass in Spicy Black Bean SauceOne can order one amongst 3 options in stir fry from either vegetarian or non-vegetarian. In the non-veg section, Kung Pao Chicken, Stir Fry Lamb with Black Pepper and Steamed Indian Sea Bass in Spicy Black Bean Sauce all are winners in their own merit and selecting one amongst the 3 is a tough choice. The vegetarians have a nice array of stir fries to choose from too. Ho Fan Noodles with ChickenStaples like Egg Fried Rice with Long Beans or Ho Fan Noodles with Chicken or Spice Ramen Noodles, with comes in formidable portion size are more than enough to satiate your taste buds and your hunger. By the end of this meal, you would not have any space left for dessert. But can you miss it? Chocolate Pebble Red Fruit FromageAfter all, the choice of dessert is from their famous Chocolate Pebble, Hazelnut Mousse, Pecan and Coffee Delice or Red Fruit Fromage. This is a wholesome tasty dinner, which is a fantastic draw for people who are lovers of Chinese food. Timings: 07:00 PM to 11:00 PM, Monday to Saturday Cost: INR 1388 for vegetarian and INR 1488 for non-vegetarian Book now! Click here For exciting offers on Christmas and New Year, Click here!

Read about Afraa Restaurant and Lounge Reopens in Salt Lake City Centre at eazydiner.com. Mediterranean cuisine, signature cocktails - a whole new offerings from Afraa & other interesting reads about restaurants and cuisines at eazydiner.com. Share latest food trends with other food lovers.

The word was around for some time that Afraa - one of the most popular gastropubs in Salt Lake, is reopening. This 2 storied gastropub, with the 150 covers in the lounge on the 6th floor and 98 covers fine dining on the 7th floor, has come back in a new avatar and is going to win the hearts of people in the city. If anyone has gone to Afraa before, brace yourself for surprises. Some of the open air spaces at the Afraa lounge, the pub has got changed into large seating areas with sunshine air conditioning box. The PDRs have been removed to make more meaningful cosy corners around the place which can host small to large groups. The lounge has a contemporary young look while the restaurant is with rich woodwork, wooden chairs, wall paintings, ornate mellow chandeliers which pairs up well with the eclectic food served here. Renowned 'Chef Abhijit Saha', who needs no introduction, is at the helm of affairs at Afraa and as a fan and pursuer of sustainable dining, the menu and food served here also focuses on health and well being of the guests. Local ingredients and artisanal produce' from the Mediterranean region forms the highlight. The parmesan cheese and parma ham are imported but again, there is a serving of Burrata cheese which is procured from Bangalore. As an ongoing process, he plans to introduce more and more organic produces including organic chicken and mutton. As Mediterranean cuisine has a vast catchment area, Mediterranean Europe like South of France, Spain, Italy, Greece, then Mediterranean west Asia which includes Turkey and Lebanon, Mediterranean African countries like Morocco, Tunisia, Egypt etc, have found some of their dishes into this menu. Chef has tried to inculcate the best and favourites of all these places in the menu. There are choice of hot and cold, almost half a dozen mezzes, salads, grills from Turkey, Lebanon infused with spices like sumac, all spice, zattar, dukkah, special garlic sauce called toum (garlic aioli without eggs) and harissa. You will find 3 kinds of pastas here. The dry or the secco ones, hand-made fresh pastas as well as gluten free secco pastas. There is a regular risotto as well as chef Saha's special creation of Millet and Black Rice Risotto. In the mains, there are enough options for fish and prawn and Kolkata Bhekti is the main and only protagonist here. The lounge menu also gets exciting with some of Chef Saha's signature cocktails being introduced and some Indian and Oriental dishes too. This is an elaborate menu and as Chef said, definitely Kolkata is going to get spoilt with choices. When asked, like a class teacher who loves all the students in a class, Chef Saha did not name any dish in particular but here are our recommendations - EspumasCauliflower EspumaThese are some of his signature creations and if one has to take a pick, then it has to be Cauliflower Espuma which had a generous amount of truffle oil on Cauliflower foam with black olive soil, garlic crumbs and citrus pudding at the bottom to cut through all the creaminess. Signature Burrata SaladBurrata SaladAn ideal melange of 2 Mediterranean countries where Burrata is from Italy and Beetroot Labneh - a traditional dip from the middle east. A refreshing dish where popped amaranth gave the necessary texture and a hint of bitterness to this rather fascinating creation. Mediterranean Non Veg Kebab PlatterKebabsThis is a wonderful amalgamation of 3 types of kebabs. There is Chicken Jujeh Kebab, Lamb Adana Kebab and Turkish Fish Kebab. Soft, tender and perfectly seasoned and spiced kebabs are pure and unadulterated in taste. Chef Abhijit Saha Signature Pomegranate ChickenPomegranate Chicken with Arugula SauceA clear show stopped, this dish comes with 3 pieces of Chicken Roulade stuffed with minced chicken and walnut crumbs drizzled generously with a sauce made with pomegranate reduction and a hint of dark chocolate. The centre of the dish is crowned with soft leeks and baby potatoes. The pomegranate and the dark chocolate were a beautiful duet of flavours. Gondhoraj Rendition This is one of the best creations of Chef Saha and a take on Philadelphia Cheese Cake.Gondhoraj Rendition The gondhoraj itself is the cheese cake with a lemon curd centre and the yellow of the gondhoraj comes from a lemon glaze. Scattered around are the various elements of a biscuit crumbles, a thin crispy chocolate wafer, walnuts and apricots stuffed with mascarpone. It is beautiful to look at and when you taste this dish in its entirety, it will lift you up spiritually. Neapolitan Style Roast Chicken PizzaThe list can be endless but you cannot afford to miss these 2 also - Roast Chicken and Mushroom Tortellini and Smoked BBQ Chicken Pizza. Timings: Afraa Lounge - 04:00 PM to 02:00 AM Afraa Restaurant - 12 noon to 03:00 PM and 07:00 PM to midnightCost for 2: Rs 1600++ Book now! Click here

If it's winter then it's Grill by the Pool at Taj Bengal Kolkata

Being in Kolkata, one rarely gets an opportunity to enjoy a dinner in the open air as almost for 8 to 9 months of the year, it is either sultry or sweaty or there is rainfall. It is from November onwards, that the weather becomes conducive enough to sit outside. The Grill by the Pool at Taj Bengal is a great place to enjoy an evening under the stars, with a glass of wine and some fresh live grills presented on a warm black stone, to spread some warmth with the little bit of nip that is the in the air. The menu is divided into appetisers, soups, steak on stone, Seafood on stone, vegetable on stone with use of sauces like Bearnaise, Red Wine Jus, Smoked Bbq, Sriracha, Makhani and Gondharaj Lemon Butter across various dishes and with sides like Herb Roasted New Potatoes, Creamy Polenta, Char Grilled Vegetables, House Salad, Potato Mousseline and Corn on Cob. The marinades that are used are Chipotle Honey, Chimichurri Rub, Panch Phoran, Texan Bbq and few more. As we spoke to 'Chef Sonu', he gave us some insight into the factors which have gone beyond planning this menu. Considering the temperature, the use of the Black Rock Grills, where the temperature stays back and food remains warm was a brilliant idea. Ingredients which are popular and available but not getting used in the other outlets of the property like Quinoa, Artichokes, Asparagus, Canadian Scallops, Andaman Nicobar Rock Lobsters etc are being used and the dishes are created, keeping in mind the taste preference of both the International and domestic guests. Our recommendations SoupsRoasted Butternut Squash Sage Cream Roasted Butternut Squash Sage Cream which was not too creamy but the puree seasoned with fresh butter, few leaves with sage added on to the flavour.Moroccan Lamb and ChickpeasOne can also try out the Moroccan Lamb and Chickpeas where had small mutton chunks and was a delight. The Chili Onion Croissants served with the soups were a surprise. Pillowy soft enough for a bite, these will disappear no sooner than served. AppetisersChef's Salad By The PoolIf you are trying out the Grill by the Pool, then you cannot miss the Chef's salad By The Pool, which is made with 3 types of imported Quinoa (white, yellow and brown) paired with grilled crunchy arugula leaves, grilled palm hearts with orange juice and Tobasco. This is a top draw for the combination of all these ingredients.Homestyle Chicken BBQ The homestyle Chicken BBQ will be loved by all. This is accompanied by a crunchy salad. Vegetable on StoneThere are some interesting options available here and surely will be a delight for all.Duet of Peruvian Asparagus and Baby CarrotsThe one which ruled above all was a Duet of Peruvian Asparagus and Baby Carrots with Honey and Sherry emulsion. The fact that the asparagus is marinated with chilli flakes and juice of orange and sautéed with little bit of butter, gives it a distinct taste. Check out the Creamy Polenta on the side and Sherry Vinegar and Honey emulsion. Seafood on stoneTiger PrawnsWhat can be more delicious than Tiger Prawns marinated with olive oil, salt, pepper, lime juice and a little thyme and then served with grilled seasonal vegetables like broccoli, asparagus, French beans, bell peppers, to name a few. Lemon butter sauce and parsley butter sauce comes with the prawn. They are simply unputdownable. Grilled BektiHow can one miss out on the glorious Grilled Bekti, which is always a favourite at this part of the country? Simple ingredients like olive oil, lemon, salt and pepper for grilling and served with mushrooms and onions, creamy mash potatoes and garden salad. Delicious it is. Finally to end with the dessert, if you have any place left then try out the Macadamia Brownie made with Brazilian Macadamia Nuts and on top, there is homemade Baileys Ice cream sprinkled with Almond Biscotti and edible flowers. These were just recommendations but there is much more to explore than this once you set yourself up for the poolside evening. A dinner for 2 will be around INR 5000 plus taxes without alcohol and this will be on till February 2019. Let us wish the winters stay till such time.
