A tale as inspired as her cooking – a school teacher who moved from Mumbai to relocate in Goa and cooked in her husband's heritage house in the by lanes of Fountainhas is Linda de Sousa. A culinary award winner, her focus is primarily on the food, no fancy garnishes or preparations, her recipes focus on a mix of Portuguese and Christian Goan, the variance and explanation that only she can explain at unbelievable throw away prices. Enter the narrow lane, tables in her miniature verandah, and the small ‘sala’ too. The restaurant is the parlour of the old house, antique mirrors and curios of the years past. A passionately inspired menu dating back to 1930, lists preparations that are not normally featured in other restaurants. Try the piexe Portuguese, torradine, pork cabidel and solantulem lost forgotten preparations or the vegetarian creamy caldinha made with cauliflower. The desserts are simple – bebinca or caramel custard. The old world feel, the price, and her personality define the place. A must-visit.
