The name derives from a seven-fold spectrum of visible light, flooding in abundantly through large windows overlooking the Bay of Bengal. It is embodied in spirit by the dedicated cuisine stations. I counted Italian/European, Grill, Cold cuts, North and South Indian, Thai, Japanese, dim sum and dessert
• My favourite station was Thai, (wo)manned by a cheerful Chef Lilly; seated with a bowl of jasmine rice, Northern Thai pork curry topped with some piping hot Thai fried chicken, I nearly forget about the assortment grilled lobsters, smoked salmon and nigiris at my disposal. Leela has a fantastic Pastry Chef Bhaskar Adeeb; save space for desserts and bakes
• Spectra is the hotel's busiest restaurant and sea view tables sell out a few days in advance over weekends. For tranquillity, book one of the tables facing the Adayar river in the corner
