Kunafa is a cake-like sweet from the Middle East. It doesn't have too many variations, unlike its country cousin, baklava, that changes its guise depending on where in the Middle-Eastern world you encounter it. Combine flaky pastry, seviyan-like straws, a bewildering array of chopped and/or whole nuts and lashings of rosewater syrup, and you can turn out an infinite variety of tiny sweet morsels. The quality of baklava and kunafa is extremely high in this unlikely outpost of the Maghreb, which has two Arabian and two Indian partners.
