The creativity of chefs knows no bounds when it comes to playing around with chocolates. Making use of new techniques and incorporating other ingredients with chocolate, pastry chefs in Mumbai are experimenting with chocolate in desserts as never before. ‘Oishi’ bonbon with togarashi spice at La Folie du Chocolat, Kalaghoda

Drawing inspiration from new French chocolate techniques of fusing art and chocolate, Pastry chef and chocolatier, Sanjana Patel has created a new and exciting range of bonbons, chocolate bars and pastries. Try the half sphere chocolate bonbons in exotic flavours like the Japanese inspired ‘Oishi’ bonbon with togarashi spice and ‘Bali’ bonbon with a vegan coconut caramel and you will not be able to stop at a few.
