The Goa Trance is a tower of calm with an infused gin, vodka, tequila, feni, white rum, orange liqueur, dark rum laced with apple and cranberry juice. Chef Ewan is the artist behind small plated preparations such as the 'Baked Sardines on Toasted Ciabatta'- boneless sardine fillets sprinkled with wood fire roasted capers, lemon, chilli, parsley and garlic served with fresh rucola leaves on ciabatta toast. A must have before you carry yourself out the door is the 'Oreo Chocolate Mousse' in whiskey jelly, honey ice cream and honeycomb. A perfect cliff-hanging experience.
