Pan Asian was a bold new experiment when it first set shop inside Chennai’s monumental ITC Grand Chola; helmed by the now-famous Chef Vikramjit Roy, it raced ahead to become the doyen of the city’s fine dining scene. Highly ambitious by any standards, Pan Asian bought the sophistication of, say a Golden Dragon, with an eclectic menu spanning many different cuisines. While Vikramjit Roy has moved on to Tian in Delhi (where he is working up a storm), Chef Ashish Singh has his task cut out for him, reigniting Pan Asian into the raging dragon it once was.
