So the sushi, served on an elaborate stand for the signature Sushi Matrix, comes with a twist (there's an innovative Carbon Sushi), the vegetarian burger (a slider, really) is made with edamame and chick peas with a hummus mayo on a lotus-root flour bun, the ‘pizza’ is Tuna Tataki, served on corn chips. Sushi matrix is a fancy name given to sushi rolls perched on a wooden stand. Vegetarian burgers are given a facelift by usage of lotus root flour buns sandwiching the chickpea patty.
