In the heart of chic Vagator’s ‘food corridor’ lies Divo. Meaning ‘amazing’ in Russian, it is a new melting pot of Eastern European culinary adventures. The restaurant hosts holidaymakers from that part of the world with a feel at home through familiar recipes such as the cold Russian beetroot soup “borsch” with beef while domestic revellers are able to explore new avenues lying in the quinoa with baby corn, cauliflower and dor-bleu sauce and carrot puree. The chicken cutlet a la kiev has one asking for more. With molecular gastronomy at the helm of creation, the Twains meet and are entertained with live music by the poolside, and a global menu complete with Italian wood-fired pizzas. Sit back and sip on the Aperol spritz whilst you place your order for the caramelised pears with ricotta cheese. Thank us later.
